Assyrtiko is undoubtedly one of Greece's best-known and most characterful white grape varieties. The grape became world-famous on the volcanic island of Santorini, where it grows in dry, windy conditions on volcanic rock soils.

These extreme conditions result in wines with a remarkably fresh acidity and a pronounced mineral style.

Today, Assyrtiko is also cultivated in other parts of Greece, such as in Macedonia and on the mainland. There, the grape often develops a slightly rounder and fruitier character, while maintaining its fresh structure.
